(Editor's note...Be careful, you could hurt yourself from over-eating!  For those that don't yet know it, Borg AKA Jeff Borger, is a gourmet cook...and if you've ever tasted any of his dishes, you have had a real treat!)


Stir Fried Shrimp and Asparagus with Thai Flavor

1 –1 ½ lb shrimp peeled, deveined and butterflied
2 tablespoons yellow curry powder
1 tablespoon cornstarch
2 cups fresh asparagus tips
2 green onions sliced on the bias about ½ inch
½ cup chopped yellow or red bell pepper
1 large or 2 small garlic cloves minced
¼ teaspoon grated ginger
1 seeded and chopped Serrano or Thai chili
½ cup coconut milk (NOT SWEETENED!!)
Juice of 1 large lime
Peanut oil
Salt and WHITE Pepper
Fresh Coriander (Cilantro)

Mix shrimp, curry, a little salt and pepper, and cornstarch. Set aside

Heat wok or pan to high heat. Add 2 tablespoons oil. when nearly smoking add vegetables and stir fry 1 minute, add garlic and ginger and stir fry one more minute.  Remove veggies to a plate.

Wipe or rinse wok, re-heat, add 2 tablespoons oil. When nearly smoking add shrimp and stir fry 2-3 minutes until shrimp curl and turn pink.

Add veggies, coconut milk and squeeze in the lime juice. Stir fry/toss for another 2 minutes or so. Reduce heat. Taste and adjust salt and pepper.

Serve immediately with hot white rice or rice noodles and garnish with cilantro, soy sauce on the side.

The flavors or this dish will absolutely blow your mind, and your taste buds!
